That is a really hard question for any restaurant manager or owner to answer. You have to have trust and faith in the rest of your management staff, but if they are not performing like they should, you must figure out what is going on. There is a fine line between managing a restaurant and spying on your staff. If they feel that you are spying on them, the trust that you have built with them will begin to erode. An easy way to see what goes on when you are not around is to pop in every once in a while, at random times. Just swing by the store to say hi to everyone. Don’t take any action while you are there, just drop in. If you are random and quick when doing this, the staff will always be on their toes when you aren’t there.
